This slaw brings together the crispness and nutrition of shredded cabbage, carrots and bell peppers with the green goodness of edamame, scallions and cilantro. There’s so much to love in this bowl of goodness: protein, fiber, plant-based omega-3 fats, vitamin C and more! But what truly sets this dish apart is its sweet-umami peanut sauce that takes it over the top. Crowned with chopped peanuts and sesame seeds for extra crunch and depth of flavor, this addictive coleslaw is a celebration of mouthwatering flavor that will elevate any mealtime moment.

Feeling hot, hot, hot? Spice up your coleslaw game with this bold and creamy variation. What’s the secret ingredient? Cottage cheese! I’ve crafted a Buffalo sauce using cottage cheese and hot sauce, packing this dish with velvety protein and fiery flavor. I fully understand that people have varying degrees of heat tolerance, so rest assured, you can dial the heat way down (simply omit the cayenne) or dial it way up (leave the cayenne in and drizzle extra hot sauce over your personal plate, like I do). I also know cottage cheese can be polarizing — I personally love it, but for folks who hate it, here’s my pitch: You cannot taste the cottage cheese in this mixture — it’s seriously undetectable. Follow my lead and toss in optional scallions and sliced jalapeños … and for a more Buffalo wing-esque experience, you can add crumbled blue cheese on top, too.
